§ Tasting note

Aged in oak for one to several years, then often blended, so it lands sour and fruity at once — cherry, balsamic, a little chocolate from the wood. Sweeter and rounder than a lambic, with real body behind the acidity. Order it when you want a sour that still tastes like it went through a barrel, not just a kettle.
