§ Tasting note

Spontaneously fermented with whatever wild yeast was floating in the brewery air, then aged in barrels for a year or more. The result is dry, sour and earthy, with barely any carbonation and a flavour that owes nothing to hops or malt. Order it once you already know you like sour beer — it is not a beginner's pour.
